Ingredients

  • 1 honey melon
  • 500 ml passata (canned or bottled)
  • Salt
  • Cayenne pepper
  • 2 Spring Onions
  • 150 g mini mozzarella balls

Instructions

    Cut the melon into wedges, remove seeds and peel. Dice the fruit flesh. Blend two‑thirds of the melon cubes with the passata in a blender until smooth. Season with salt and cayenne pepper. Chill well.

    Trim and rinse the spring onions, then finely slice them. Add the sliced onions, mozzarella balls, and remaining melon cubes to the chilled bowl. Taste and adjust seasoning if needed.
