Ingredients
- 1 kg watermelon
- 1 cantaloupe melon
- 1 honeydew melon
- Lemon balm
- 4 tbsp Lemon juice
- 2 sprigs thyme
- 40 g pine nuts
- 300 g crème fraîche
- 80 g powdered sugar
- 150 g yogurt
- 1 vanilla bean (aroma)
- Lemon balm (for garnish)

Quarter the melons, remove seeds, peel and cut flesh into bite‑size cubes. Rinse lemon balm, finely chop leaves. Mix lemon balm and lemon juice with melon pieces; cover and refrigerate for 30 minutes.

Rinse thyme, finely chop leaves. Toast pine nuts in a dry pan. Add thyme. Transfer to a plate and set aside.

Whisk crème fraîche with powdered sugar, yogurt, and vanilla aroma. Toss the melon salad briefly before serving and sprinkle with pine nuts. Garnish with lemon balm. Serve extra vanilla cream on the side.
