Ingredients
- 300 g watermelon flesh
- 1 cucumber
- 1 Avocado
- 1 Red Onion
- 100 g Arugula
- 125 g mozzarella balls
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
- 1 tsp Honey
- Salt
- Pepper
- 2 tbsp pistachio nuts (15 g each)

Cut the watermelon into large cubes. Peel, wash and dice the cucumber. Halve the avocado, remove the pit, scoop out the flesh and cube it. Peel the onion and slice it into thin rings. Wash the arugula, rinse and shake dry. Drain the mozzarella balls, halve them and combine all prepared ingredients in a salad bowl.

Whisk together olive oil, balsamic vinegar and honey; season with salt and pepper. Toss thoroughly with the salad. Sprinkle pistachios over the melon salad and serve.
