Fragrant Mango Gazpacho

- 1 Red Onion
- 1 Garlic clove
- 2 Tomatoes
- 1 Mango
- 1 cucumber
- 1 red chili pepper
- 400 ml tomato juice
- 3 tbsp olive oil
- 1 tsp lemon juice
- a pinch brown sugar
- Salt
- Pepper (freshly ground)
- crushed ice (for serving)
- basil (for garnish)

Peel the onion and garlic; cut the garlic into pieces and dice the onion finely. Set aside about 1 tbsp as a garnish. Wash, quarter, seed, and dice the tomatoes. Peel the mango, remove the flesh from the pit, dice about one-third of it for garnish, and cut the rest into chunks. Peel the cucumber, halve it lengthwise, remove the seeds, and cube the flesh. Wash the chili pepper, halve it, deseed, and combine with the cucumber, onion, mango, garlic, tomato juice, and 2 tbsp oil in a blender until smooth. Add cold water as needed. Season with lemon juice, sugar, salt, and pepper; fold in the diced mango, tomatoes, and onions. Chill for at least 30 minutes.

Distribute crushed ice into glasses. Taste the soup and pour it over the ice. Drizzle with the remaining oil and serve garnished with basil.
