Ingredients

  • 4 slices beef (ready-to-cook, trimmed, roastbeef without fat, about 180 g)
  • 2 cloves garlic
  • 10 dried tomatoes (in oil)
  • 8 sprigs rosemary
  • 2 sprigs thyme
  • 8 tbsp pine nuts
  • 8 slices pancetta
  • olive oil
  • Salt
  • Pepper (freshly ground)

Instructions

    Preheat the oven to 180°C fan.

    Wash the beef, pat dry, and flatten it on a work surface with your hand.

    Peel the garlic cloves and crush them lightly with some salt in a mortar. Drain the dried tomatoes and finely chop them. Add them to the mortar with the garlic and mash as much as possible. Spread the paste over the inside of the meat. Season with salt and pepper. Place two slices of pancetta on each piece, sprinkle some pine nuts over it, and put a small sprig of rosemary in the middle. Roll the meat tightly from the short side (around the rosemary sprig). Add another sprig of rosemary and a sprig of thyme on top and secure with kitchen twine. Repeat for all roulades. Brush a roasting pan with 2–3 tbsp oil and arrange the roulades side by side in it. Put the pan in the preheated oven and roast for about 30 minutes, turning occasionally. Ten minutes before the end of cooking, scatter the remaining pine nuts into the pan and roast together. Serve the roulades immediately while still hot.
