Meat-Filled Maultaschen

- 300 g flour
- Salt
- 3 eggs
- 1 stale roll
- 50 g smoked ham
- 4 onions
- 20 g butter
- 350 g mixed ground beef
- 1 egg
- 1 tbsp freshly chopped parsley
- Salt

- 4 tbsp clarified butter
- 1 tbsp red peppercorns

Soak the roll in lukewarm water. Knead the dough ingredients with 2-3 tbsp cold water, shape into a ball and let rest covered at room temperature for about 20 minutes. Dice the smoked ham and one peeled onion. In a pan melt the butter and sauté the ham and onion cubes. Mix the ground beef with the onion mixture, add the egg and the squeezed roll, and work into a meat dough. Season with parsley, salt, and pepper.

Roll out the dough thinly on a floured surface and place spoonfuls of filling 3 cm apart on one half. Fold the second half over and press the fillings firmly closed. Cut rectangles (2x4 cm) with a pastry cutter. Peel carrots and dice finely. Boil carrot cubes in beef broth. Add the maultaschen to the boiling broth and cook for about 10-15 minutes. Meanwhile, peel remaining onions and cut into rings. Fry them crisp in 4-6 tbsp heated clarified butter. Remove the maultaschen with a slotted spoon, drain, and toss with red peppercorns and onions. Serve on preheated plates.
