Ingredients

  • 8 chicken thighs
  • 1 onion
  • 2 Garlic cloves
  • 2 bell peppers (red and green)
  • Salt
  • Pepper (freshly ground)
  • 3 tbsp olive oil
  • 150 g bacon cubes
  • 400 g diced tomatoes (canned)
  • 2 Tbsp paprika powder
  • 1 tbsp freshly chopped oregano

Instructions

    Wash and pat dry the chicken thighs. Peel and finely dice the onion and garlic. Wash, halve, deseed, and slice the bell peppers into strips.

    Season the chicken thighs with salt and pepper, then sear them all sides in a hot pan with oil; remove from pan. Fry the bacon for about 1 minute, add onion and garlic, and cook together 1-2 minutes. Add the pepper strips briefly, then stir in tomatoes. Season again and place the chicken on top.

    Sprinkle paprika over everything and bake at 180°C (350°F) for about 30 minutes, basting occasionally with liquid. Finally sprinkle oregano on top and adjust seasoning.
