Ingredients
- 500 g red beet (with greens)
- 6 Matjes fillets
- 4 shallots
- 3 tbsp apple cider vinegar
- 1 tsp Honey
- 6 tbsp grape seed oil
- 2 tbsp capers
- Salt
- Pepper
- 1 apple

Clean, wash the red beet and set aside the leaves. Roast unpeeled in a preheated oven at 200 °C (180 °C fan, gas level 3) for about 45 minutes until tender. Cool, peel, and dice.

Meanwhile, rinse the matjes, pat dry, and cube. Peel and cube the shallots. Combine beet, matjes, and shallots with vinegar, honey, oil, and capers; season with salt and pepper and let rest for about 30 minutes.

During this time wash 3–4 beet leaves thoroughly, shake off excess water, and slice into strips. Peel, halve, core, and cube the apple, then fold into the salad. Plate the matjes salad and sprinkle with beet leaf strips.
