Ingredients
- 1 kg beef fillet
- 1 head celery root
- 1 bunch small carrots
- 2 onions
- 3 tbsp butter
- 1 piece fresh horseradish root

Wash the meat, pat dry and tie with kitchen twine like a package. Salt and pepper. Peel, halve the celery root and shred it into fine sticks with a vegetable peeler. Peel, wash the carrots, leaving some green on them. Peel and quarter the onions. Place the vegetables and meat in a steamer bag with butter, salt and pepper. Cook for about 30 minutes in gently simmering water, ensuring the bag is well covered by water.

Slice the meat thinly and arrange it on a plate with the vegetables. Peel and finely grate the horseradish, then add.
