Marshmallow-Cookies from Spoonsparrow: The tasty cookies are easy to make and delight both young and old sweet tooths!

Ingredients

  • 50 g liquid butter
  • 3 tbsp beet syrup
  • 75 g raw cane sugar
  • 1 egg yolk
  • 175 g flour
  • 1 tsp Baking powder
  • 1 tsp ground ginger
  • 1 tsp cinnamon
  • 1 tsp ground allspice
  • 1 pinch salt
  • 100 g chocolate chips
  • 50 g mini marshmallows

Instructions

    Whisk butter, syrup, sugar and egg yolk. Mix flour, baking powder and spices; combine with the butter mixture to form dough, folding in 50 g chocolate chips.

    Line a baking sheet with parchment paper. Drop spoonful-sized portions onto the sheet at wide spacing and bake in preheated oven at 180 °C (fan 160 °C; gas: level 2–3) for 13–15 minutes.

    After half the baking time, top with mini marshmallows and chocolate chips, press lightly, and finish baking. Remove cookies from oven and cool on a wire rack.
