Ingredients

  • 12 small artichokes
  • 1 lemon
  • Salt
  • 2 Garlic cloves
  • 200 g salsiccia sausage
  • 200 g mushrooms
  • 4 red bell peppers
  • 3 sprigs rosemary
  • 40 g green olives (pitted)
  • 40 g black olives (pitted)
  • 20 g capers
  • 150 ml olive oil
  • black pepper (freshly ground)

Instructions

    Clean and trim the artichokes: cut off the top third, remove outer hard leaves, trim stems and lower tough base, and discard any stringy parts. Squeeze lemon juice over them to prevent browning. Boil in salted water for about 8 minutes, then drain and let cool to lukewarm.

    Peel garlic cloves. Slice salsiccia into rounds. Clean mushrooms; leave whole or halve depending on size. Wash bell peppers, cut lengthwise, remove seeds and white membranes, and slice into wide strips.

    In a shallow pan, sear sausage slices in 2 tablespoons of hot oil for 1–2 minutes, then transfer to a dish. Add remaining lemon juice, garlic cloves, mushrooms, pepper strips, rosemary, olives, capers, and olive oil. Season with black pepper and mix well. Let the mixture rest for at least 2 hours before serving, preferably overnight.
