Ingredients

  • 1 tbsp chopped tarragon
  • 2 Garlic cloves
  • Salt
  • Pepper (freshly ground)
  • 1 tsp paprika powder (spicy)
  • 1 tsp curry powder
  • 1 tsp coarse mustard
  • 1 tbsp Madeira wine
  • 1 tbsp cognac
  • 6 tbsp Olive oil
  • A splash Worcestershire sauce
  • 4 beef filet steaks (about 180 g each)

Instructions

    Preheat the oven to 100°C fan.

    Wash and dry the tarragon, shake off excess water, and finely chop. Peel and finely slice the garlic cloves. Mix together with salt, pepper, curry powder, mustard, Madeira, Cognac, olive oil, and Worcestershire sauce in a small bowl.

    Wash the beef filet, pat dry, and cut into 5–7 cm thick slices. Tie each slice with kitchen twine to hold shape, brush with the marinate, and let rest for about 30 minutes.

    Heat a grill pan with hot oil and cook the steaks for 3–7 minutes per side depending on desired doneness (rare, medium, or well‑done), brushing again with the remaining marinade. Let rest in the oven for about 10 minutes.

    Serve with a fresh salad and baguette.
