Wild Herb Lasagna

Ingredients

  • 8 lasagne sheets
  • 2 Spring Onions
  • 100 g wild herbs (sorrell, watercress, young nettles..., or frozen garden herbs)
  • chili powder
  • 1 tsp Mustard
  • 2 tbsp lemon juice
  • 1 tbsp oil
  • Salt
  • Pepper (freshly ground)
  • 4 Carrots
  • 0.5 cucumber
  • 1 kohlrabi
  • 4 celery stalks
  • 0.5 bunch Chives
  • 1 Shallot
  • 1 Garlic clove
  • 100 g quark
  • 2 Tbsp whipping cream
  • Salt
  • Pepper (freshly ground)

Instructions

    Bring salted water to a boil. Cut lasagne sheets in half horizontally and cook for about 8 minutes or according to package instructions until al dente. Trim the spring onions and cut into pieces. Roughly chop the remaining herbs. Mix everything with chili, mustard, lemon juice and oil; season with salt and pepper.

    Spread the herb mixture over the lasagne sheets, layer them, and serve.

    Wash or trim the vegetables: slice carrots, cucumber and kohlrabi into strips, cut celery into pieces. Wash chives and cut into rings. Peel shallot and garlic and finely dice. Combine quark, cream, chives, shallot and garlic; season with salt and pepper. Arrange the vegetables and dip together on a plate.
