Ingredients

  • 4 scallops (pre‑cooked, no shell)
  • 1 Garlic clove
  • 2 stalks Parsley
  • 3 tbsp olive oil
  • 2 tsp butter
  • Sea salt
  • white pepper
  • paprika flakes (for garnish)
  • shell half (for serving)

Instructions

  1. 1.

Wash the scallops and pat them dry.

  2. 2.

Wash the parsley, shake off excess water and finely chop. Peel and finely chop the garlic. Heat 2 tbsp of olive oil in a small pan and sauté the garlic until translucent; add the parsley, season with salt and pepper, and keep warm.

  3. 3.

Sear the scallops slowly in not-too‑hot butter with 1 tbsp of oil on both sides for about 2 minutes each. Lightly season with salt and pepper.

  4. 4.

Arrange the scallops on preheated shell halves. Pour the parsley mixture over them and sprinkle with paprika flakes before serving.
