Sea Urchin Tartar with Mango and Lime

- 6 sea urchins (without roe, very fresh)
- 1 tbsp chopped parsley
- 1 spring onion (white part only)
- 0.5 small red chili pepper
- 2 limes
- Salt

- Cayenne pepper
- 2 tbsp argan oil

Wash a lime, dry it, cut in half, slice thinly, then quarter the slices and set aside for garnish. Zest some of the lime peel and also set aside for garnish. Cut the second lime in half and juice both limes. Clean, wash, pat dry, and finely chop the spring onion. Deseed the chili and finely mince its flesh. Pat the sea urchins dry and dice them into very small cubes. Marinate with chili, spring onions, parsley, a splash of lime juice, salt, pepper, and argan oil; taste and refrigerate covered.

Peel the mango, remove the flesh from the pit, and cut into 1 cm cubes. Marinate with lime juice, cayenne pepper, and a pinch of salt. Distribute the mango cubes among four glasses, top with the sea urchin tartar, and garnish with lime wedges and zest before serving.
