Marinated Salmon on Rösti

Ingredients
- 400 g salmon fillet (with skin; pinched out bones)
- 3 tbsp dill (finely chopped)
- 1 tbsp honey
- 1 lemon (juice and grated zest)
- Salt
- Pepper (freshly ground)
- 0.5 tsp cloves powder
- 4 crushed juniper berries
- 600 g Potatoes
- 1 egg yolk
- ginger (about 3 cm piece, peeled)
- 1 tbsp Sesame seeds
- 5 tbsp sesame oil
Instructions

Slice ginger into the finest julienne.

Whisk honey with 2 tbsp sesame oil, lemon juice and zest, cloves, juniper berries, salt and pepper.

Place salmon skin-side down on cling film, top with sesame seeds, ginger strips and dill, drizzle sauce over it, wrap in film, put in a shallow dish and refrigerate for about 2 days to marinate.

Peel potatoes, grate coarsely, squeeze out excess moisture, season with salt and pepper, fold in egg yolk.

Heat sesame oil and gradually fry small pancakes from the potato mixture, keep warm.

Slice salmon at an angle into very thin slices with a sharp knife, arrange on the pancakes and serve.
