Ingredients

  • 300 g rice flour
  • 100 g lentil flour
  • 1 tsp salt
  • 3 tbsp yogurt
  • 3 tbsp Coconut oil

Instructions

    Mix the rice flour with the lentil flour and salt in a bowl. Whisk the yogurt with about 300 ml water and slowly stir into the flour mixture using a whisk until smooth. Cover and refrigerate overnight to allow the batter to rise.

    Heat a little coconut oil in a pan over medium heat. Pour a small ladle of batter, tilt the pan to spread thinly, and cook until golden brown. Flip and cook the other side similarly. Repeat with remaining batter, watching the temperature closely so the crepes don’t darken too quickly.

    Serve the crepes as a side for vegetable curry or enjoy them plain.
