Marinated Salmon

Ingredients
- 1 tsp juniper berries
- 2 tsp black peppercorns
- 1 bunch dill (chopped)
- 1 tsp organic lemon zest
- 400 g coarse sea salt
- 200 g sugar
- 800 g salmon fillet (center cut, skin on)

Crush the juniper berries and peppercorns in a mortar. Trim the ends of the dill stems (save the tips for later) and chop them finely. Combine the spices with lemon zest, sea salt, and sugar in a bowl.

Wash the salmon fillet, pat dry, and place it skin-side down in a shallow dish. Evenly coat the flesh with the spice mixture.

Cover the fish with a layer of plastic wrap. Place a board on top to weigh it down and refrigerate for 36 hours, turning halfway through.

After marinating, rinse the salmon, pat dry, and sprinkle over the reserved dill tips. Slice into thin rounds from the skin side. Serve with mustard-dill sauce alongside vegetable salad or quick steaks.
