Ingredients
- 1 kg mixed mushrooms (e.g., button, chanterelle, porcini)
- 400 g small onions
- 2 cloves garlic
- 0.5 l white wine vinegar
- 2 tbsp salt
- 2 Bay leaves
- 2 tsp peppercorns
- 500 ml olive oil

Clean the mushrooms carefully and leave them whole or cut into pieces depending on size. Peel and slice the onions into wedges. Peel and halve the garlic.

Bring the vinegar with salt, 500 ml water, onions, garlic, bay leaves, and peppercorns to a boil. Add the mushrooms and simmer for about 5 minutes. Skim off foam (including spices and onions) with a slotted spoon and transfer to prepared jars. Fill the jars with oil until everything is covered. Seal the jars and store in a cool, dark place for about 2 days before serving.
