Ingredients
- 4 pre‑cooked mackerels (deboned, gutted, headless)
- 5 onions
- 10 bay leaves
- 1 untreated lemon (sliced)
- 2 tbsp juniper berries
- 3 lemons (including juice)
- pepper (coarsely ground from the mill)
- Salt
- 1 tbsp sugar
- 1 l water

Peel and slice onions into rings. Cut each mackerel into 4 pieces. Bring water with bay leaves, juniper berries, sugar, salt, and plenty of pepper to a boil.

Add lemon juice, lemon slices, and onion rings. Set aside. Place the mackerel pieces into the boiling liquid and let them steep for 4–5 hours. Serve cold.
