Sesame Broccoli with Mango Dip

Ingredients

  • 1 Shallot
  • 1 Mango
  • 2 tbsp white wine vinegar
  • 2 tbsp Maple syrup
  • Salt
  • 1 tsp Cayenne pepper
  • 600 g broccoli (1 head)
  • 1 egg
  • 100 g whole wheat rice flour
  • 100 g rice starch
  • a pinch baking soda
  • 50 g sesame seeds (4 tbsp)
  • Pepper
  • 5 tbsp Rapeseed Oil

    For the dip, peel and finely dice the shallot. Peel the mango, cut the flesh from the pit and finely dice it. Cook the mango with the shallot, vinegar and maple syrup in a pot until boiling. Simmer the dip for 2–3 minutes over low heat. Then season with salt and cayenne pepper and let cool.

    Meanwhile clean, wash and cut the broccoli into florets and halve them lengthwise. Whisk the egg and 270 ml very cold water until frothy. Add the flour, starch and a pinch of baking soda, then stir in the sesame seeds to make a smooth batter and season with salt and pepper. Place the batter in a shallow dish and dip each broccoli floret individually into it. Heat oil in a deep pan. Fry the broccoli on all sides over medium heat for 4–5 minutes. Drain and serve with the mango dip.
