Marinated Chicken Skewers
These marinated grilled skewers from Spoonsparrow are the highlight of your next barbecue!
Ingredients
- 200 g Chicken breast fillet
- 1 Red Onion
- 1 clove of garlic
- 3 oranges
- 2 sprigs of thyme
- 1 tsp paprika powder
- Pinch of cayenne pepper
- Pinch of cinnamon
- Salt
- Pepper
- 40 g arugula (0.5 bunch)
- 100 g cherry tomatoes
- 2 tbsp olive oil
Instructions

Rinse the chicken fillet, pat dry, and cut it lengthwise into strips about 1 cm wide.

Thread the chicken strips in a wavy pattern onto 4 long wooden skewers and place them in a rectangular baking dish.

Peel and finely chop the onion and garlic. Peel 2 oranges, removing all the white pith.

Cut the fruit fillets between the membranes with a sharp knife, catching the juice in a bowl. Set the fruit fillets aside on a plate.

Halve and juice the 3rd orange, measuring out 70 ml of juice. Add it to the remaining juice in the bowl.

Wash the thyme, shake off excess water, and pluck the leaves. Mix with paprika powder, cayenne pepper, cinnamon, garlic, onions, salt, and pepper into the orange juice.

Pour the marinade over the chicken skewers in the dish and let it marinate for about 20 minutes.

Meanwhile, clean, wash, and spin dry the arugula. Rinse and halve the cherry tomatoes.

Remove the chicken skewers from the marinade and set them aside on a plate. Heat 1 tbsp of oil in a non-stick pan, add the marinade, and reduce it to half its volume.

Pour the reduced liquid into a small bowl. Wipe out the pan, heat the remaining oil in it, and brown the chicken skewers all over for about 6 minutes.

Arrange the arugula, orange fillets, and tomatoes on a platter. Drizzle with the cooled marinade and serve the hot skewers on top.
