Maracuja Cake
Maracuja Cake by Spoonsparrow: We have the Spoonsparrow recipe for the summer quark cake!
Ingredients
- 3 eggs
- a pinch of salt
- 100 g Granulated Sugar
- 1 tbsp Lemon Juice
- 30 g Butter
- 500 g Low-fat quark
- 50 g whipping cream
- 2 tbsp Cornstarch
- 2 tart apples (Braeburn, Boskop)
- 3 passion fruits

Separate the eggs. Beat the egg whites with a pinch of salt to stiff peaks. Whisk the yolks with sugar and lemon juice until fluffy. Melt butter in a small saucepan over low heat. Stir quark, cream and melted butter into mixture.

Peel, halve, core and dice the apples. Place apple cubes in the springform pan and spread them out. Halve the passion fruits, scoop out the pulp, place it in a tall container and stir through.

Add two thirds of the passion fruit pulp to the quark mixture and fold in. Spread the quark mixture over the apples in the baking dish. Distribute the remaining pulp on top. Bake in preheated oven at 200 °C (180 °C fan; gas: level 3) for about 50–55 minutes. Turn off the oven, leave the cake inside for another 5 minutes. Then remove and let cool well. Serve cold.
