Ingredients

  • 300 g shelled almonds
  • 8 eggs
  • 300 g powdered sugar
  • untreated lemon zest
  • 1 tsp cinnamon
  • 1 packet vanilla sugar
  • breadcrumbs (for the pan)
  • powdered sugar

Instructions

    Preheat oven to 180°C.

    Separate the eggs. Finely grind the almonds. Whisk the powdered sugar into the yolks until smooth. Add the almonds, lemon zest, cinnamon and vanilla sugar and mix well.

    Beat the egg whites very stiffly and fold them into the almond-yolk mixture.

    Grease a springform pan (26 cm diameter) and dust it with breadcrumbs. Pour in the batter and bake for about 50 minutes.

    Before serving, dust with powdered sugar.
