Mango Sorbet with Orange Fillets

Ingredients
- 2 large ripe mangoes
- 4 tbsp Lemon juice
- 4 tbsp sugar
- 1 Egg white
- 0.5 tsp ground cinnamon
- 0.25 tsp ground coriander
- 4 oranges
- 40 ml orange liqueur
- 1 tbsp honey
- mint (for garnish)
- powdered sugar (for dusting)

Peel the mangoes and cut them into slices, catching the juice. Add the fruit flesh to the juice and blend with 2 tbsp water and lemon juice. Strain through a sieve, then stir in sugar, whisked egg white, cinnamon, and coriander. Freeze the mixture in an ice cream maker (or place it in a shallow metal bowl and freeze for about 3 hours, stirring vigorously every 30 minutes to prevent large crystals).

Peel the oranges with a sharp knife, removing the white pith, then cut the fruit fillets from the separating membranes and mix them with the liqueur and honey. Marinate for about 20 minutes.

Before serving arrange the orange fillets on plates. Scoop sorbet balls and place them beside the fillets. Garnish with mint and dust with powdered sugar.
