Ingredients
- 1 Lime
- 100 g sugar
- 100 ml water
- 100 ml dry sparkling wine
- 400 g mango flesh
- mango pieces
Instructions

Wash, peel, and juice the lime. Combine sugar, lime zest and juice, and water in a pot; bring to a boil while stirring and simmer for about 3 minutes. Strain and top with sparkling wine.

Chop the mango flesh and finely puree it with the sugar-water mixture.

Pour everything into a shallow metal bowl and place in the freezer. Every 30 minutes, stir well with a fork until fully frozen.

Use an ice cream scoop to form sorbet into balls, serve in chilled cups, and garnish with mango slices.
