Mango Gelée with Grapes

Ingredients

  • 2 organic oranges
  • 40 g sugar (2 tbsp)
  • 250 g mango puree (canned)
  • 1 tsp ground cardamom
  • 6 gelatin sheets
  • 16 light seedless grapes
  • 75 ml whipping cream
  • 125 g yogurt (1.5% fat)

Instructions

    Wash oranges hot, pat dry, zest peel and squeeze juice.

    In a pot bring 50 ml water with sugar to boil. Remove from heat and let cool briefly. Stir syrup with mango puree, orange juice and cardamom.

    Soak gelatin in cold water. Then melt in a pot over low heat, whisking in 2–3 tbsp of mango mixture. Afterwards stir gelatin into the remaining mango mix.

    Fill fruit mixture into four glasses. Wash grapes, halve them and place cut side down on top of the gelée. Refrigerate for 3 hours.

    Just before serving whip cream until stiff peaks form and gently fold into yogurt.

    Garnish gelée with whipped mixture and orange zest.
