Mallorcan Chicken

Ingredients

  • 1 chicken (ca. 1.5 kg)
  • Salt
  • Pepper (freshly ground)
  • 1 tbsp flour
  • 3 tbsp olive oil
  • 1 onion
  • 3 fresh garlic cloves
  • 4 Carrots
  • 250 ml dry white wine
  • 150 g dried apricots
  • 1 cinnamon stick
  • 3 fresh bay leaves

Instructions

    Preheat the oven to 200°C fan.

    Rinse the chicken, pat dry and cut into about 8 pieces. Season with salt and pepper and dust with flour. In a roasting pan, brown all sides in hot oil until golden.

    Meanwhile peel the onion, garlic and carrots; dice the onion, halve the garlic and slice the carrots. Remove the chicken from the pan and sauté the vegetables in the same pan. Deglaze with wine, season with salt and pepper, add roughly chopped apricots, cinnamon stick and bay leaves, then return the chicken pieces. Roast in the oven for about 25 minutes, turning occasionally; add water if needed.
