Ingredients
- 4 onions
- 1 small eggplant
- 2 zucchinis
- 2 carrots
- 2 tbsp oil
- 200 g red lentils
- 500 ml broth
- 1 tsp turmeric
- 1 tsp salt
- 2 tsp ground coriander
- 2 tsp ground cumin
- 2 tsp mustard powder
- 1 fresh red chili pepper
- 2 limes (juice)
- 1 bunch fresh cilantro
Instructions

Peel onions and cut into rings. Peel, wash, and slice eggplant, zucchini, and carrots. Wash the chili pepper, stem it, seed it, and finely chop.

Heat oil in a large pot and briefly sauté vegetables while stirring constantly. Rinse lentils and add them to the vegetables.

Pour in broth, stir in spices and chopped chili. Simmer covered over low heat for about 25 minutes. Season curry with lime juice and salt. Wash cilantro, finely chop, and fold into the curry.
