Ingredients

  • 250 g spelt flakes
  • 250 ml vegetable broth
  • 1 Red Onion
  • 50 g mixed salad leaves
  • 4 Cherry Tomatoes
  • 1 tbsp Sesame seeds
  • 1 Tbsp starch
  • Salt
  • pepper (ground)
  • 200 g sheep cheese
  • 80 g breadcrumbs
  • 5 tbsp Rapeseed Oil
  • 12 black olives

Instructions

    Pour hot vegetable broth over the spelt flakes and let them soak covered for 1 hour. In the meantime, peel and slice the onion into rings. Wash and dry the salad leaves. Rinse the tomatoes and cut them into wedges.

    Mix sesame seeds and starch into the spelt mixture, season with salt and pepper. Dice the sheep cheese into small cubes. Shape flat patties from the spelt mixture and cheese, then coat with breadcrumbs.

    Heat rapeseed oil in a large non‑stick pan and fry the patties for 5 minutes on each side until golden brown. Arrange salad as a bed on plates and place the patties on top. Garnish with tomatoes, olives, and onion rings.
