Ingredients

  • 125 g butter
  • 125 g flour
  • 125 g sugar
  • 3 eggs
  • 1 pinch salt
  • 60 g ground almonds
  • 1 tbsp orange blossom water
  • 1 untreated lemon (zest)

Instructions

    Melt the butter and let it cool. Sift the flour into a bowl and mix with the sugar. Scrape the eggs into the flour-sugar mixture using a dough scraper. Gradually add the butter, salt, almonds, orange blossom water, and lemon zest. Let rest for about 1 hour.

    Meanwhile preheat the oven to 200 °C fan. Fill 12 buttered Madeleine tins or a Madeleine baking mat with corresponding depressions with the batter and bake lightly browned for about 12 minutes.
