Macarons with Banana Cream

Ingredients
- 60 g ground almonds (peeled)
- 110 g powdered sugar
- 2 egg whites
- 20 g sugar
- food coloring (green)
- 2 small kiwis
- 1 Banana
- a splash of lemon juice
- 120 g powdered sugar

Preheat the oven to 150°C with fan and top heat.

Grind the almonds with powdered sugar finely and sift through a fine sieve onto a baking tray. Bake in the oven for 5-7 minutes, then let cool.

Beat the egg whites until stiff, then gradually add the sugar. Color with a few drops of green food coloring. Add the almond mixture and fold in. Fill a piping bag and pipe about 30 dots onto parchment paper on a tray. Let them dry slightly for about an hour. Then bake again at 150°C for 10-12 minutes. Carefully remove from the tray and cool.

Peel the kiwis and banana, then blend with lemon juice and powdered sugar into a fine puree. Spread the filling on the bottom half of the macarons and gently press another macaron on top.
