Colorful Macarons
Vibrant macarons by Spoonsparrow are perfect for snacking and gifting!
Ingredients
- 4 egg whites
- 2 tsp lemon juice
- 150 g fine caster sugar
- 200 g ground almonds
- Food coloring (as desired)
- 100 g white chocolate
- 3 tbsp quark
- food coloring

Beat the egg whites with lemon juice until stiff peaks form, gradually adding the caster sugar while continuing to beat until a glossy, firm mixture forms. Gently fold in the almonds. Divide the batter and color each portion with chosen food coloring.

Fill a piping bag fitted with a large round tip and pipe small half-spheres about 2 cm onto a baking sheet lined with parchment paper. Bake in a preheated oven at 150 °C (convection 130 °C; gas: level 1–2) for about 35 minutes, leaving the oven door slightly ajar.

For the filling, chop the white chocolate into small pieces and melt over a gentle hot water bath. Remove from heat, let cool briefly, then whisk in the quark gradually until smooth.

Divide the batter again, color as desired, allow the cream to cool slightly, then spread half of the colored macarons with various fillings and pair them with matching counterparts.
