Macaroni with Bell Pepper Cottage Cheese Sauce

Try the macaroni with bell pepper cottage cheese sauce from Spoonsparrow and load up on many secondary plant compounds!

Ingredients

  • 2 red bell peppers
  • 2 onions
  • 2 tbsp olive oil
  • 1 tsp spelt whole‑grain flour
  • 50 ml Vegetable broth
  • 500 g whole‑grain macaroni
  • Salt
  • 2 tsp sweet paprika powder
  • 2 tsp hot paprika powder
  • 4 tbsp heavy cream
  • 200 g cottage cheese
  • 2 tbsp chives rings

Instructions

    Halve the bell peppers, remove seeds, wash and slice into thin strips. Peel the onions and slice them into strips as well.

    Heat oil in a pot and sauté the pepper and onion strips. Sprinkle flour over them, pour in about 50 ml broth, stir well and cook for 5–8 minutes.

    Meanwhile cook the macaroni according to package instructions in plenty of boiling salted water until al dente, drain and set aside.

    Stir paprika powder and cream into the peppers, season with salt. Add the cooked macaroni to the pepper mixture, top with cottage cheese and chives rings, and serve hot on pasta plates.
