Lunch Sandwich with Radicchio Turkey Salad

Ingredients

  • 4 slices of country bread
  • 2 tbsp mayonnaise
  • butter
  • 2 Spring Onions
  • 0.5 lemon (organic, juice and zest)
  • 1 small radicchio
  • 2 tbsp olive oil
  • 200 g Turkey breast fillet
  • 0.5 tsp paprika powder (sweet)
  • Salt
  • Pepper (freshly ground)
  • 2 hard‑boiled eggs

Instructions

    Spread butter on the bread slices. Wash, trim and chop the spring onions.

  2. 2.

    Season the turkey with paprika, salt and pepper, then brown it in a large pan with 2 tbsp oil for about 3–5 minutes per side; remove from heat.

    Add the spring onions, lemon juice and zest to the pan and sauté for a few minutes.

    Slice or tear the cooked turkey into thin strips.

  5. 5.

    Split the radicchio into leaves, wash, dry and cut into fine strips. Peel and chop the eggs.

    Spread mayonnaise on the bread slices. Mix the salad, turkey, spring onions and eggs; season with salt and pepper. Spread the mixture over two bread slices, top with the remaining slices and garnish with chives before serving.
