Low-Carb Marble Cake
Low-Carb Baking? No problem. This recipe creates a heavenly light low-carb cake. A classic marble cake – but low in carbohydrates.
Ingredients
- 6 Eggs
- 1 lemon
- 2 Vanilla Beans
- 50 g butter
- 90 g Xucker (Xylitol)
- 250 g Quark (20% fat)
- 220 g ground almonds
- 1 tsp Baking Soda
- Pinch of salt
- 2 tbsp Cocoa Powder (unsweetened)
Instructions

Line a loaf pan with baking paper.

Separate the eggs and set the egg whites aside in a chilled bowl. Wash and dry the lemon, then zest it. Halve the vanilla beans and scrape out the seeds.

Cream butter and Xucker together until smooth. Gradually add the egg yolks.

Stir in quark, lemon zest, and vanilla seeds.

Add ground almonds and baking soda to the batter and mix well to form a dough. Beat the egg whites with salt until stiff and gently fold them into the dough.

Divide the dough in half and mix one half with the cocoa powder.

Pour the light batter into the pan and spread the chocolate batter on top. Use a wooden skewer or knife to swirl the batter together, creating the characteristic marble cake pattern.

Bake the cake for about 45 minutes in a preheated oven at 160 °C (140 °C convection; Gas: Mark 2) and let it cool slightly. Serve warm or cold.
