Low-Carb Gnocchi with Sage Carrots
Low-carb gnocchi on sage carrots not only delight fans of a low-carbohydrate diet!
Ingredients
- 400 g Low-fat quark
- 3 medium eggs
- 0.5 tsp turmeric powder
- Salt
- 60 g guar gum
- 3 Carrots
- 1 Garlic clove
- 2 shallots
- 4 sage stalks
- 30 g block parmesan (30% fat in the product)
- 45 g butter (3 tbsp)
- Pepper
Instructions

Whisk quark, eggs, turmeric and 1 tsp salt thoroughly. Gradually add guar gum, working into a smooth dough and let rest for 20 minutes.

Meanwhile peel, wash and slice carrots. Peel garlic and shallots and dice them. Wash sage, pat dry and cut leaves into strips. Grate parmesan.

Divide the dough into quarters, roll each into a thumb-thick rope, cut into about 2 cm pieces and decorate with a fork’s tines. Drop gnocchi into plenty of boiling salted water and bring to a boil. Immediately reduce heat and simmer gnocchi for about 5 minutes over low heat. Use a slotted spoon to lift them out and drain.

Heat butter in a pan. Sauté carrots, shallots and garlic over medium heat for 5–8 minutes. Add sage and gnocchi, season with salt and pepper. Plate gnocchi with sage carrots and garnish with parmesan.
