Ingredients

  • 40 g chopped pumpkin seeds
  • 40 g sunflower seeds
  • 20 g sesame
  • 150 g low‑fat quark
  • 4 eggs
  • 0.5 tsp Salt
  • 1 tsp Baking powder
  • 50 g ground flaxseed
  • 2 tbsp wheat bran
  • 2 tbsp Chia seeds
  • 4 tbsp rolled oats
  • 1 tbsp psyllium husk
  • 50 g chopped hazelnuts

Instructions

    Mix pumpkin, sunflower seeds and sesame, set aside 2 tbsp.

  2. 2.

    Whisk quark with eggs, fold in salt and baking powder.

  3. 3.

    Stir in pumpkin, sunflower seeds and sesame, flaxseed, bran, chia, oats, psyllium husk and hazelnuts.

    Line a loaf pan (~25 cm) with parchment paper, pour in the dough, smooth the top and cut a groove with a knife. Sprinkle the reserved seeds on top and press lightly.

    Bake in a preheated oven at 180 °C (fan 160 °C, gas: level 2) for 45‑55 minutes.
