Avocado Bean Salad

Avocado bean salad by Spoonsparrow is quick to prepare and always delicious!

Ingredients

  • 500 g green beans
  • Salt
  • 500 g cherry tomatoes
  • 1 Garlic clove
  • 1 onion
  • 3 tbsp white wine vinegar
  • Pepper
  • a pinch raw cane sugar
  • 6 tbsp Olive oil
  • 1 bunch scallions
  • 1 Avocado
  • 1 bunch basil (ca. 20 g)

Instructions

    Wash the green beans and cook them in heavily salted water for about 10 minutes. Drain, rinse with cold water, and let drain.

    Meanwhile peel and finely dice the garlic and onion. Mix vinegar with garlic and onions, season with salt, pepper, and raw cane sugar, then gradually whisk in olive oil while stirring continuously.

    Trim and wash the scallions, cut into rings. Peel the avocado, halve it, remove the pit, and cut into pieces. Combine all ingredients, season with salt and pepper. Rinse basil, shake dry, and tear leaves off.

    Serve the avocado bean salad sprinkled with basil.
