Lobster Quiche

A perfect after-work recipe – quick, healthy and made with fresh ingredients.

Ingredients

  • 250 g flour
  • 125 g cold butter
  • 1 pinch salt
  • 1 egg
  • 250 g smoked salmon (sliced)
  • 1 onion
  • 2 Garlic cloves
  • 4 eggs
  • 100 g freshly grated Gruyère cheese
  • 300 ml whipping cream
  • Salt
  • pepper (ground)
  • 3 tbsp chives

Instructions

    Preheat the oven to 200°C.

    Sift flour onto a work surface, mix with salt and create a well in the center. Cut cold butter into small pieces and distribute around the well. Crack the egg into the center and use a knife to cut through all ingredients, creating small dough crumbs. Quickly knead with hands into a dough, shape into a ball, wrap in cling film and chill for about 30 minutes.

    Meanwhile, slice the salmon into strips. Peel and finely chop the onion; combine both in a bowl. Peel garlic and press it into the mixture. In another bowl whisk the eggs, add cheese and cream, then season with salt and pepper. Roll out the dough on a floured surface and line tart tins. Bake the crust on the middle rack of the preheated oven at 200°C for about 8 minutes.

    Spread the salmon mixture over the crust, pour the cheese‑egg‑cream mixture on top, sprinkle with chives and bake for about 25 minutes until set. Serve warm.
