Ingredients
- 4 shallots
- 2 apples (e.g., Boskop)
- 50 g butter
- 2 tbsp sugar
- 500 g veal or beef liver (4 slices)
- wheat flour
- Pepper (freshly ground)
- Salt
- 3 tbsp Calvados
Instructions

Peel the shallots, slice them into thin rings and sauté in a little butter until translucent. Remove from the pan and set aside.

Remove the core of the washed and well-polished apples with a corer; then cut the apples into rings. Heat the remaining butter and lightly caramelize the sugar, add the apple rings and let them caramelize on both sides. Finish by drizzling Calvados over them and adding the shallots back in.
