Ingredients
- 300 g green lentils
- 2 onions
- 40 g Butter
- 1 tbsp flour
- 1 tsp dried mint
- 1 ½ tbsp tomato paste
- black pepper (freshly ground)
- 1 l meat broth
- 100 g soup noodles
- Salt
- 1 tsp paprika powder (sweet or hot to taste)

Instructions

Soak the lentils in plenty of cold water for 4 hours, then drain in a sieve. Peel and finely chop the onions.

Heat butter in a pot over medium heat and sauté onions until they begin to brown lightly. Stir in flour and toast briefly. Add mint, tomato paste, and a pinch of pepper; mix well. Gradually pour in broth while stirring, bringing to a boil.

Add lentils and simmer gently for about 20 minutes until tender. Add noodles and cook according to package instructions, 6–8 minutes. Season with salt and paprika to taste.
