Lime Vegetable Rice

Ingredients
- 350 g basmati rice (cooked)
- 2 chicken breast fillets (cut into pieces)
- 1 Red Onion
- 2 carrots
- 100 g frozen peas
- Salt
- Pepper (freshly ground)
- Cayenne pepper
- 4 ripe tomatoes
- 200 ml poultry stock
- 1 Garlic clove
- olive oil (cold pressed)
- 2 limes (juice)

Wash the tomatoes, blanch them, peel and cut into large pieces. Peel and slice the onion into wedges. Peel and slice the carrots into rounds. Peel the garlic. Heat 2 tbsp olive oil in a large pan and sauté the onion until translucent. Add the chicken and cook briefly, then add the tomatoes, garlic, and carrots.

Add the stock and simmer covered for about 15 minutes. Stir in the peas 5 minutes before the end of cooking. Season with salt, pepper, and cayenne pepper. Mix the sauce with the rice and finish with lime juice. Adjust seasoning if needed. Serve immediately.
