Ingredients
- 1 small Shallot
- 200 g fresh morels
- 1 stalk leek
- 4 small chicken breast fillets
- Pepper
- Salt
- 2 tbsp clarified butter
- 100 ml dry white wine
- 125 g whipping cream
- 250 ml poultry stock
- lemon juice (to taste)

Peel and finely chop the shallot. Clean the morels, cutting them in half or quarters if large.

Pat the chicken breast fillets dry, season with pepper and salt, then quickly sear both sides in hot clarified butter. Remove and keep warm.

Sauté the shallots in the pan, deglaze with white wine, reduce, then add cream and stock. Stir in leek pieces and morels; bring to a boil.

Turn off heat, place the chicken fillets into the sauce, let them simmer for 5 minutes. Taste and serve.
