Ingredients

  • 10 untreated limes
  • 2 stalks lemon balm
  • 2 stalks peppermint
  • 1 kg sugar

Instructions

    Wash the limes hot and dry them. Slice into rounds and place with the herbs in a bowl.

    Boil the sugar with 1 l water and simmer for 2‑3 minutes. Pour over the limes and let cool. Cover and let steep at a cool place for about 48 hours.

    Strain the syrup through a cloth-lined sieve and bring to a boil in a pot. Transfer to prepared bottles, seal tightly, and allow to cool completely.
