Lightning Cheesecake

Ingredients
- 1 Vanilla bean
- 1 Organic lemon
- 4 eggs
- 1 pinch of salt
- 100 g room‑temperature butter
- 85 g agave syrup
- 1 kg quark (20% fat)
- 75 g spelt whole‑grain semolina
- 1 tbsp powdered sugar from whole cane sugar
Instructions

Slice the vanilla bean lengthwise and scrape out the seeds. Rinse the lemon hot, pat dry with paper towels, zest finely, and squeeze out the juice.

Separate the eggs. Beat the egg whites with a pinch of salt until stiff peaks form and set aside. In a bowl whisk the yolks, butter, and agave syrup until frothy. In another bowl combine vanilla seeds, lemon zest and juice with quark. Fold the quark mixture into the yolk mixture. Gently fold in the semolina and beaten egg whites.

Transfer the batter to a parchment‑lined springform pan and smooth the surface. Bake in a preheated oven at 180 °C (fan 160 °C; gas 2–3) on the middle rack for 40–50 minutes. Remove from the oven, cool on a wire rack while still in the pan. Release the cake from the pan and dust with powdered sugar.
