Ingredients

  • 700 g strawberries
  • 300 g sweet cherries (pitted and weighed)
  • 1 apple
  • 1 vanilla pod (aroma)
  • 500 g gelatin sugar (2:1 or the corresponding amount of 3:1 gelatin sugar)
  • 20 ml cherry liqueur
  • 1 tbsp strawberry syrup
  • 1 tbsp powdered sugar
  • 500 g low-fat quark (0.2% fat)
  • 3 tbsp skim milk
  • 200 g plant-based cream substitute (low-fat for whipping or regular cream)

    For the strawberry-cherry jam, clean, wash and chop the strawberries. Wash and halve the cherries. Peel and finely grate the apple. Mix everything with the vanilla aroma in a pot with the gelatin sugar, cover and let stand for about 2 hours. Then bring to a boil while stirring and simmer for 4 minutes. Stir in the liqueur. Fill hot-washed jars immediately and seal.

    For the strawberry-quark layered cup, whisk 8 tbsp of the strawberry-cherry jam with strawberry syrup. Whisk the quark with milk and powdered sugar until smooth. Beat the cream with a stabilizer until stiff, then fold gently into the quark mixture. Layer the cream and jam in glasses and refrigerate for 2 hours. Garnish with fresh strawberries and lemon balm leaves before serving.
