Light Yogurt Ice Cream with Honey

Ingredients

  • 100 g walnuts
  • 3 tbsp honey
  • 500 g Greek yogurt
  • 1 tbsp Lemon Juice
  • 1 tbsp raw cane sugar powdered sugar
  • 150 ml heavy cream (at least 30% fat)

Instructions

    Coarsely chop the nuts. In a saucepan, caramelize 1 tablespoon of honey and add the nuts. Stir briefly and spread on parchment paper to cool, then coarsely chop again.

    Mix the yogurt with lemon juice and powdered sugar. Whip the cream stiffly and gradually fold into the yogurt mixture. Stir in the candied walnut shards and pour the batter into a pre-chilled container.
