Light broccoli casserole by Spoonsparrow – truly delicious and quick to make!

Ingredients

  • 400 g Broccoli
  • 2 tbsp lemon juice
  • 50 g butter
  • 1 tbsp flour
  • 250 g heavy cream
  • 3 eggs
  • 125 g Emmental cheese
  • Salt
  • Pepper
  • butter (for the ramekins)

Instructions

    Wash broccoli, cut into florets and blanch in boiling salted water for 4 minutes, drain, shock in ice water, let dry, then chop and mix with lemon juice, salt, and pepper.

    Melt butter in a saucepan, sprinkle flour, cook until pale, whisk in cream to smooth, remove from heat and cool.
