Fried Green Tomatoes
Juicy, fruity and simply good: Try the fried green tomatoes from Spoonsparrow!
Ingredients
- 500 g green tomatoes
- Salt
- pepper from grinder
- 4 tsp olive oil
- 150 g meat tomato (1 meat tomato)
- 4 small firm tomatoes
- 3 spring onions
- 1 Garlic clove
- 2 tbsp olive oil
- Salt
- Cayenne pepper
- 1 pinch sugar
- 1 pinch cumin
Instructions

Rinse the green tomatoes and cut them into thicker slices. Season with salt and pepper. Heat portions of olive oil in a non-stick pan over high heat. Quickly sear the tomato slices on both sides, then let cool.

Score the meat tomato crosswise, rinse it for 1 minute with boiling water, drain, shock in cold water, and peel. Chop or mash the tomato very small. Rinse the tomatoes and dice them finely. Clean the spring onions and rinse them. Slice half into fine rings and the rest into thin strips. Peel the garlic.

Mix the fried green tomatoes with the spring onion rings. Squeeze in the garlic. Stir in olive oil. Season with salt, cayenne pepper, sugar, and cumin. Spread the tomato mixture over the fried tomatoes and arrange with the spring onion strips.
